We cannot say this strongly enough. Always run a bench trial before you add anything to your barrel. Once wine goes into your barrel, you cannot undo it.
Instead, get into the habit of playing around on your kitchen bench first. Pull a sample of your barrel wine, then trial different ratios of topping material in a glass or small jug. Taste. Adjust. Taste again. When you are 100 percent happy with the balance, then and only then pour the wine into your barrel.
